How to Make Waakye at Home (Beans & Rice the Ghana Way)

Waakye (rice and beans cooked together) is Ghana’s affordable power meal. Making it at home means you control salt, oil, and how soft the beans get.

Street waakye is often served with shito, gari, spaghetti, egg, stew, and salad — prepare sides separately.

Method

  1. Sort and wash beans. Soak if your beans are hard (speeds cooking).
  2. Boil beans until almost tender.
  3. If using millet stalk, rinse and add for colour; remove before serving if preferred.
  4. Add rinsed rice to the pot with enough water.
  5. Season lightly.
  6. Cook until rice and beans are soft and moisture is absorbed.
  7. Fluff and rest covered.

Texture Tips

  • Beans should be soft but not disintegrated into sludge.
  • If rice finishes before beans, you started rice too early — next time cook beans longer first.
  • Too wet? Uncover and steam off excess on low heat.

What to Serve With Waakye

  • Tomato stew / wele / meat/fish

FAQ

Can I skip millet stalk?

Yes — flavour still works; colour will be paler.

Is waakye healthy?

Beans add fibre/protein. Watch oily stews and huge gari portions if you’re cutting calories.

How long do leftovers keep?

Refrigerate promptly; eat within 1–2 days. Reheat thoroughly.
